I'm not the religious type at all, but if there is one day a year I hold sacred (other than cyber Monday), it's earth day. I started my career as an environmentalist and did that for 8 years. I learned to love and appreciate nature no matter where you can find it, and to treat the earth with as much respect and dignity as it deserves. I get irrationally upset when I hear people denying the existence of climate change, or when people throw things out of the window of their car. It hurts me to see natural spaces polluted. I worked for a long time to better these situations, and other related to the environment such as open space issues, clean water issues, pollution prevention, etc.

As I've gotten older, my experience of the earth has expanded into moving away from the processed foods I grew up on and eating natural, whole foods. I slip up sometimes - sometimes for long periods of time - but my body knows that what comes from the earth and feeds from the earth is best for me. I'm spending more time in the produce section than anywhere else and want to do my best to eat in the best way I know how.

We only have one earth left, so let's cherish it.
